Specifications include, but are not limited to: ▪ Caterer must complete and submit a pro forma statement (provided by the City) detailing gross receipts for food, non-alcoholic beverages and alcohol, with final invoices and payment of license fees by the 15th of each month. ▪ Caterer shall pay the City a license fee for each private event catered at the Beach House with the following percentages on gross receipts: • 15% for food • 15% for non-alcoholic beverages • 12% for alcoholic beverages • 5% for drop-offs ▪ Caterers must list all subcontractors hired for liquor service. ▪ Caterer shall offer menus that exercise best efforts to promote healthy and sustainable food practices, including the promotion of the importance of healthy, locally and sustainably grown, organic foods from California, and the use of sustainable practices, organic ingredients, and recycled products whenever possible. ▪ Caterer shall not use food packaging, cups, plates, trays, bowls, take-out food containers, or any other disposable products containing expanded polystyrene (EPS), more commonly known as Styrofoam. ▪ Caterer shall make best efforts to compost food waste off-site following events. ▪ Caterer shall conform to the site's prohibition of pouring liquid and food down the drain(s).Caterer shall conform to professional dress code and appearance.
