Specifications include, but are not limited to: Upon an emergency or disaster event, meals will be requested by the County as either buffet-style or shelf-stable meals. • Buffet-style meals will consist of large pre-prepared dishes to be served and maintained at the appropriate temperature at the County location. • Shelf-stable meals shall be individual pre-prepared meal kits with a long shelf life that can be ordered and stored prior to an emergency/disaster for use when necessary. The meal kit must include any utensils or accessories required to consume the meal. Bidders must be able to prepare the meals at a separate location and be able to deliver to and serve at the specified locations. All necessary serving utensils (large ladles, tongs, etc.) and equipment (sternos, serving trays, etc.) must be provided by the bidder. The Polk County Emergency Operation Center (EOC) has a warming oven, steam table, and a warming rack which may be used. The other locations have no equipment other than tables/counters available for serving. As these meals are to be served immediately prior, during, and after an emergency/disaster, the expectation is a quality meal that meets nutritional standards with minimal service levels. Please be aware that the County is not requesting a bid with fine dining in mind, rather a quick, easy, and quality meal for shelter inhabitants and County employees. Please bid accordingly. Three meals a day are expected to be provided.
