The Contractor shall manage and operate the inmate food services at the CCDC. The Contractor shall operate on their own credit and be responsible for all costs of operation as enumerated hereinafter. Emphasis on preparing and serving daily meals, including establishment of cycle menus for regular and special or restricted diets, shall be required. No deviations to sample menus shall be made. Contractors shall bid on the four (4)-week cycle provided in this ITB and shall provide acknowledgement of same with their bid submission along with a nutritional analysis of these menus. No alternate menus shall be accepted. All cooking shall be done onsite from scratch. The Contractor shall also be responsible for preparing a bag lunch for work release inmates and inmates attending court hearings. The number of bag lunches required ranges between 25 to 30 per day. The cost of said operation and the services to be rendered by the Contractor shall include, but may not be limited to: 1) Complete on-site management of food service operation and facilities. 2) Administrative, professional, and technical supervisory support. 3) Periodic revision of twenty-eight (28) day cycle menus as planned and certified by the Project Manager or authorized designee.
