Contractor shall manage and operate the resident food service for the SMCDRC located in Leonardtown, Maryland. The Contractor shall operate and maintain compliance in accordance with the minimum standards for adult Detention and Rehabilitations as delineated in Title 12 of the Code of Maryland Regulations. These food services shall be provided for incarcerated individuals with emphasis on preparing and serving daily meals, including the establishment of cycle menus for regular and special or restricted diets. The Contractor shall provide nutrition services, food procurement, food preparation, menu planning, and service to residents of the SMCDRC as described herein for food service operation. The Contractor shall procure all goods, supplies, and small equipment items other than starting inventory necessary to meet the required nutrition and sanitation standards of the County and the State of Maryland.
