All meals will be provided in Styrofoam containers and beverages will be provided with lids. Napkins, salt, pepper and necessary plastic eating utensils will be included with each meal ordered. When deemed medically necessary, meals meeting special dietary needs will be provided at the same rate as the following bids. All bidders should comply with the Mississippi State Department of Health guidelines for Jails housing State Prisoners. Each Prisoner must get a minimum of 2,000 calories per day whether served in two or three meals. Each bidder must have a procedure in place for providing physician prescribed special diets for six months. Each bidder must maintain safe and sanitary food preparation and transportation practices. Breakfast will include the following: A minimum of 3 ounces of eggs. 2 Ounces of bacon, sausage, ham or other suitable meat. 3 Ounces of grits or 3 ounces of potatoes. One biscuit. One margarine pat. One four (4) ounce container of fruit juice or milk. Noon Lunch will consist of the following: Regular Lunch Meal - Sandwich & Beverage OR Inmate Worker Lunch Meal – Two Sandwiches & Beverage OR A four (4) ounce portion of meat or a six (6) ounce portion of meat casserole. One starch selection which would be a minimum of three (3) ounces. Starch would be either potatoes, rice or macaroni and cheese. One cooked leaf vegetable, three (3) ounce portion or salad or slaw if appropriate. One three (3) ounce portion of dried beans or peas or an additional three (3) ounce portion of a hot vegetable. One dinner roll or biscuit. One 16 ounce serving of tea. Evening Meals will consist of the following: A four (4) ounce portion of meat or a six (6) ounce portion of meat casserole. One starch selection which would be a minimum of three (3) ounces. Starch would be either potatoes, rice or macaroni and cheese. One three (3) ounce portion of dried beans or peas or an additional three (3) ounce portion of a hot vegetable. One dinner roll or biscuit. One 16 ounce serving of tea
