The mobile kitchen must include the following features at a minimum: • Welded aluminum diamond plate flooring, or equivalent, which extends up the wall 8” – 12” • Fiber reinforced panel (FRP) wall coverings, or suitable equivalent for food preparation environments • White coated aluminum panel ceiling • LED and/or fluorescent lighting • Exterior lighting • Multiple duplex receptacles throughout • Two tempered make-up air units, one of which must be located on the roof of the mobile kitchen (the other unit can be a ground unit). • Separate gas connections for make-up air units • At least four (4) HVAC units • Roll-up door access on one side and hinged double-swing door access on the opposite side of the assembled mobile kitchen unit, with at least three (3) additional pedestrian doors (one for normal egress and two for emergency egress) • Ramp and loading dock lift system at primary entry point; stairs at all other egress door locations • One (1) 8’ x 23’ walk-in refrigerator • One (1) 8’ x 23’ walk-in freezer • One (1) 8’ x 10’ enclosed office space with tempered glass windows to provide visibility into the mobile kitchen • Fire sprinkler system if required by code • Floor drains • Steel skirting • Comply with all relevant codes
