1. Menus are to be approved by the Suffolk County Office for the Aging on a six-week cycle. The cycle menu must reflect seasonal changes and food availability. Menus must include varied flavors colors, textures, food choices and preparation methods. 2. Vendor must include a sample six-week cycle low-sodium menu in the bid response. 3. Vendor shall prepare menus for three (3) month intervals to be submitted two (2) months in advance of each interval. After Town review, a menu meeting will be held at 423 Park Ave.., Huntington, NY 11743 and will be attended by a Vendor representative and a Suffolk County Office for the Aging representative. Menus are to be reviewed and approved by the Town of Huntington and the Suffolk County Office for the Aging. Substitutions may be made only upon prior notice to the Suffolk County Office for the Aging and the Town of Huntington. 4. The meal pattern is a template for the menu planner and provides a framework of foods to be include. The daily meal pattern must adhere to the following New York State Dietary Requirements: FOOD GROUP SERVINGS PER MEAL Whole Grain Bread or Bread Alternate 2 services: (1 oz. each); 1 of the servings must be whole grain Vegetable 2 servings: 1/2 cup each or equivalent measure (may serve an additional vegetable instead of a fruit) Fruit 1 serving: 1/2 cup or equivalent measure (may serve an additional fruit instead of vegetable) Milk 1% or Skim or Milk Alternate 1 serving: 1 cup or equivalent measure Meat or Meat Alternate 3 oz. cooked edible protein* Fat/Vegetable Oils 1 serving: 1 teaspoon r equivalent measure
