Specifications include, but are not limited to: The University of Wisconsin-Madison, hereinafter referred to as the “University”, through its Purchasing Services Department, hereinafter referred to as “Purchasing”, on behalf of Housing Dining & Culinary Services and the WI Union Dining & Hospitality hereinafter referred to as Department requests bids for the purchase of Sushi Preparation. Housing Dining & Culinary Services plans to offer pre-packaged sushi in their three convenience store locations, sushi platters through their Catering operation and buffet sushi through a Marketplace venue. During the Fall 2022 semester, over 14,000 packages of sushi were sold in the convenience stores in Housing and over 10,000 buffet rolls were served through a Marketplace venue. Wisconsin Union Dining & Hospitality plan to offer pre-packaged sushi in their dining locations and consider offering sushi through their Catering operations and a made-to-order retail sushi & Boba Tea station at Union South.
