Specifications include, but are not limited to: The Department plans to offer a made-to-order sushi station that, based upon need and business, will run a minimum of 5 days a week, up to 7 days a week, along with a made-to-order “Asian Station” that will offer ramen and rice bowls. Locations of the two (2) stations will be determined based upon discussion by the winning bidder and University Dining’s management team; Associate Director of Dining will have final approval. Along with made-to-order offerings, the stations will provide services to all University Dining’s retail outlets, to include Common Ground Café, Homegrown Café, Dreyfus University Center Food Court, University Dining’s Food Truck (as needed for special events or special menu offerings, not on a regular basis), On Point Catering (as needed for special events or special menu offerings, not on a regular basis), and Lower Marketplace. Bidders should be able to provide price breaks for serving sushi at Upper DeBot Dining Center during special events (e.g. charging for the cost of goods and labor with an additional 5% mark up only, not retail price). All stations are to be staffed by employees provided by winning bidder. Employees would be full-time, however, University Dining could help facilitate student help, billing back to bidder at the student labor charge.
