The University seeks proposals from qualified restaurant operators to operate the restaurant in the golf course clubhouse, which includes a full-service restaurant and bar/lounge, and to operate the adjacent pavilion as an event space with food and beverage services, as well as to provide food and beverage options on the golf course with a cart service. The University seeks a distinctive dining experience with high quality food in a comfortable, casual atmosphere. The operator must cater to golf course clientele, and also the Pullman/Moscow community as a whole. Preference will be given to a cuisine that prioritizes and showcases locally sourced food and beverages produced by Washington State University and regional farmers/producers in the Pacific Northwest. In addition, the University may collaborate with the successful operator to explore and develop a creative vision for future expansion that could include “living/learning” labs or other features that develop University/student/community partnerships to explore the liquid arts, training in fermentation, food innovation, and hospitality. Proposers should indicate in in their proposals whether they are amenable to exploring such expansion opportunities with the University in the future.
