Specifications include, but are not limited to: Metro Parks Tacoma desires to contract with one or more concessionaire(s) capable of successfully offering a diverse, healthy, and fresh food menu that has reasonably priced options and dependability. Scope of work is to purchase, prepare, sell, market, and serve food, non-alcoholic beverages and other service items for general visitors at Les Davis Pier located at 3427 Ruston Way, Tacoma, WA 98402.The concessionaire is responsible for furnishing all staffing and equipment necessary to conduct operations in line with the aforementioned scope. Metro Parks is seeking proposals from established food service concessionaires that have a successful record of providing quality food and services. Examples of suitable products would include coffee stand, ice cream, shaved ice, etc. CONCESSIONNAIRE SPACE: • Les Davis Pier - The concessionaire area includes front servicing area of 19’ x 11’ 2” and back storage area of 7’ 8” x 19’ 2”. A. Cleaning and Maintenance: Tenant is responsible for busing and cleaning of the Premise and seating areas adjacent to the Premise including the outdoor seating areas, during its hours of operation. Tenant will assume all costs for busing and cleaning assigned areas, including, but not limited to the following: 1. Emptying of trash receptacles located on and adjacent to the premises and the outdoor seating area. 2. Responsibilities include daily (or more if necessary) cleaning of receptacles and taking trash to the dumpsters. 3. Spot sweep litter and debris off the floors and spot mop spills on, in and adjacent to the Premises and the outdoor seating area during hours of operations as outlined in above map. 4. Provide cleaning supplies, materials, plastic trash liners, tools and equipment required to operate and clean the designated areas. This includes the cost to rent cleaning equipment. B. Customer Services: Tenant is responsible for general customer services and support including: 1. Hiring staff that will engage the public with courteous services and with a philosophy of adding to the enjoyment of the visitors at the Premise. 2. Maintaining compliance with Tacoma-Pierce County Health Department Proper Food Handling Procedures. 3. Ensuring staff wears mutually agreed upon work uniforms at Premises during work hours; and Resolving customer concerns immediately and directly. C. Menu: Tenant is responsible for producing a menu that is geared primarily towards the general public and park patrons (visitors) and offer a convenient selection of food and beverages that are competitively priced. Metro Parks will approve the initial and subsequent menus for products and pricing. 1. Metro Parks’ Healthy Food Option policy requires concessionaires to provide between 25%- 50% health alternatives on the menu, Attachment A. 2. Metro Parks has entered into an exclusive agreement with Coca-Cola. During the Term of this Agreement Coca-Cola shall have the exclusive right to make all Beverages (including Fountain Products and Packaged Products sold through vending machines) available for sale and distribution within each Metro Parks’ Facilities...
